Volkswagens are known for having trouble with their transmissions, even more so in the 1st couple generations. This problem could just be your transmission sticking when getting into another gear. I recommend not pushing the car so your running at high RPMs, slowly work your way up that hill, and even try letting off the gas it may help it shift some. If you're really concerned with it you can take it somewhere to get the transmission checked, something maybe slipping or sticking it all depends and it can be a small inexpensive fix or it could be a heck of a lot, but its all up to you.

Manual shift is hard to shift. Also don't know how to check gearbox lubricant

Check the gearbox lubricant, good, I recommend Amsoil MT-GL4. But probably you have problems with your clutch, slave, pump or clutch disc, check for leaks on slave located on transmission if you have problems with any of this parts you will get some shift problems.

2006 Jetta TDI Stalls in gear

These little engines(although very good little engines)have a problem with carbon build up in the intake manifold. It builds up so bad it begins to choke the engine off. The only solution is to remove the intake and soak with a good solvent over night and will generally take you a good couple of hours to clean out to get to "like new" again. Once this is accomplished, it's like driving your car new again!!
