Try taking the oxygen sensor out of the manifold by the firewall and take it for a ride,it sounds like u have a plugged catalytic converter,by removing the sensor your givin the pressure somewhere to escape,if u do have to replace the cat converter i would suggest putting a factory converter on it because if u dont, the check engine light will come on due to the fact that aftermarket converters only have three of the four precious metals required to work properly thats why they are cheaper

As far as using alot of fuel that could be a number of things such as a tune up. As far as your speddometer needle going up and down, Every Gran Prix in the 2000's that i have worked on does the same thing. Why ? you got me but it is common and I wouldn't worry about it. The shutting down after starting is common also. I am going to assume you have the 3800 (3.8 liter) engine. what I have come across is that these vehicles are losing fuel pressure while sitting and the only way I have been able to repair this problem is to change out the whoole fuel pump assembly. Unless you have a leak somewhere, which could be in your case do to using alot of fuel this was the only way i have been able to solve that problem. I would check for a gas leak in your case, most likely the fuel injector O rings if you do have a leak. I know it wasn't alot of help but wanted you to know that due to the fact you have a Grand Prix, your problems are common. i hope this helps you at least a little and good luck.

Change fuel filter, check air filter, If this doesnt help, check fuel pump pressure, should be over 55 lbs.

2001 Grand Prix GT 3800 series engine

The best solution is to do a complete tune up with new spark plugs, wires, fuel filter, air filter, pcv valve and oil change.. If this still happen I would get some fuel injector cleaner, or use marvel mystery oil in both your oil(crankcase) and gas tank. You can get mystery oil at walmart..its in a red bottle with black label.
