You can assess this by carefully applying the parking brake part way while holding the release and coasting down hill on an open, unoccupied bit of roadway (conditions permitting). The parking brake applies only the drums on this truck.
A shudder under these conditions would point to drums being out-of-round.

I have a 2000 chevy silverado, the front left brakes keep getting stuck and i just change caliper for the second time so i know its not that.

It may be a bad rubber brake line that connects to that caliper, preventing brake fluid from exiting the caliper. Older rubber brake lines can collapse internally and prevent fluid passing through. If the rubber feels spongy, it needs replacing.

This sounds like the front drive shaft that may have worn u joints. Put the vehicle in park, set the brake and proceed to shake the front drive shaft up and down to inspect for wear. Let me know what you find.

Brakes have locked up after having to hit them hard to avoid a crash. Now they smell and make the car bounce after hitting 45 mph.

sounds like to problems did you actually hit some thing? if not the burnt smell should go away. about the bounce at 45 mph are you sure that it's not a shake and does it go away at 55 mph or different speed? if this is whats happening the front tire is out of balance weight could have fallen off. try this

When the truck gets up to 60-65 mph it shakes real bad. and then when i hit the brakes the rear of the truck acts like it is bouncing. just replaced the front brake rotars last week and had tires checked...

do you feel any vibration when braking at lower speeds like 30? if any vibrations happen only when braking, fix those first. I suspect there is a rear brake problem. also verify that the driveshaft and universal joints are good.
