Question about 2000 Dodge Caravan
Stick a fuel pressure guage on fuel rail port and run guage out of hood and tape it down to something, fuel pressure sould be 48-52 psi all the time, take it for a long drive, when starts to lose power, fuel pressure drops, you have a fuel pump problem, replace it, easy to change, drop rear of fuel tank, remove 2 fuel lines, 1 harness, hammer the retainer clip out, and remove the pump module, best if tank is down past 1/2. to 1/4 full. what is happening is your fuel pump motor is heating up and seizing, cools down and ready to go again. GOOD LUCK RDJRP

Sounds like there may be a fuel filter problem, try replacing the fuel filter. Specially if you have not done it over a while.
