do you have a check engine light? If so I'm betting air flow insufficient, This is cause by a vacuum hose that is either deteriated or has a hole. Run you hands over the vacuum hoses any of them that turns your hand black like playing with charcole replace them.
There is a process used by your local shops where they put a smoke machine to look for leaks.
That is the best place to start without changing the idle air control valve $$$$

Sounds like a fuel injector is clogged up or is not firing due to the computer not firing it. Check by putting a noid light on each injector and checking for pulse by viewing a blinking light from it. Also, one can check to see if a stethoscope can be used to listen for a clicking from the injector indicating it's at least pulsing that way.
