Check your idle air control valve. If not that try your throttle position sensor or your throttle cable may need adjusting.

My 2000 did the same thing. The EGR valve is likely sticking. Remove and clean or replace. That should fix the problem. If not, look at the above mentioned issues

On the 02 sebring when the cooling fan or i turn on the air the car idles(rpm) high then back down then stalls out if i dont hit the gas to steady the rpms

run the fault codes as the ecm should compensate for the extra load on the engine when the ac compressor cuts in
there will be a rpm drop of around 150 rpms when it cuts in then it should settle back to normal rpms and when the ac cuts out the rpms will go up and the settle back to normal
anything else indicates a sensor fault.

1995 Isuzu Rodeo 3.2 cleaned throttle body of gunk with in next few days it became hard to start. Had to push gas pedal to the floor to get it started and now the rpms jump all over the place when shifting...

There's lots of vacuum hoses on the old Rodeo's. Cleaning the throttle can and will clog these up. I've done them and they can be a pain. Best bet is to replace the hoses. Also check metal lines for clogs.

When in gear and a/c is turned on, wants to stall

run the fault codes and check for problem idle control sensor
500 rpms are too slow for idle should be around 850 for automatic
also have the voltage regulator /alternator checked as the problem is not enough voltage ti run the car and the ac because the available voltage isn't high enough

I have a 2003 grand am. When i hit the gas in park or neutral the rpms get to 4k then dip down back to 3500 and bounce around there

on most newer vehicles the rev limiter is lower in park or neutral than in gear. i dont know why gm is doing this i just know that its normal. i dont know what year they started this but im guessing that is what your seeing. does it run fine in gear?

1997 suburban 2wheel drive when i put it in drive doesnt want to

Unless you have run over something or something has hit the linkage that you may possibly repair to adjust the gear locations to their proper place on the trans, you must get trans checked out.

I had the same trouble 2 to 3000 rpms. there is a power steering stwich on the bottom of steering pump unplug this and see if your rpms come down. Mine did,you can get a new stwich from for about 60.00. It took me four months and 400.00 to find this out
