I'd check the evap system. When you fill up, the air in the tank has to go somewhere or it will burp back up the fill pipe and shut off the pump.

SOURCE: Gasoline pump at gas station keeps turning off

There is a vent valve located near the fuel tank. The vent valve is part of the EVAP emission system. If the valve is obstructed or failed, air will not escape while refueling.
Has the service engine light come on at all?

The gas tank on your truck doesn't decide when the gas pump shuts off. It sounds like you think it's not as full as it is. Make sure your looking at the gas gauge instead of the temp gauge.

How do you remove gasoline from the gas tank of 2003 chevy tahoe

You'll have to drop the tank while it is full... It sucks too. My advice is to get some help. It'll be heavy.

If I have less than 1/4 tank of gas my yukon won't start.

I had the same problem. I had a few different mechanics tell me that the fuel pump is starting to go out when it does that. The fuel pump is located in the fuel tank, and the gasoline keeps the pump cool and lubricated. When the fuel tank is less than a 1/4 full, the pump is not submerged anymore, and can have trouble sending gas to the engine. My emergency fix was to get underneath the car on the driver's side and bang on the gas tank about three times. It will start up, and will run great unless you turn your engine off. But eventually you're going to need a new fuel pump. Once I replaced it, the problem went away.
