I don't know what pudding is but I think it's the throttle position sensor if you do a lot of highway driving the sensor contact is in that position and has worn causing a break in the voltage at that specific point in the contacts otherwise you could drive all day without a problem but once you get to that point of gas pedal travel it starts to misfire from it
check the inside of the engine oil cap to see if a creamy pudding like substance is stuck inside of it. If so the head gasket is lealing and ruined the cranks main bearings causing the knocking noise
The part where you say that sometimes the car acts like it dont want to crank has me thinking your problem might be with the battery terminals. Check and make sure they are clean and tight. This would be where i would start diagnosing this problem from what you described.
