That is the is the check engine light, it means a failure in the emission system has occurred, take it to a Kragen or other parts store like it and they will run a test ( it is free) that will pull a code from the computer, that code will indicate the area or circuit that has a problem.

If it was important to me to remove a safety device I'd figure out how to do it without breaking anything, remove it, and see what happened. I'd just be sure that I could put it back before the next accident.
Determine how the headrest is attached. On some vehicles they have a metal bar that slides down into a slot, and the height can be adjusted. These kind can be pulled up to remove them.
