Have a 3.0 liter v6 engine and white smoke and antifreeze coming out of the exhaust pipe, head gaskets or something ?

sounds like a head gasket to me, check the oil and see if there are any signs of water contamination ( milky looking oil -- but this is not always the case ). if the gasket failed between the water jacket and the cylinder then you will just get the ' white smoke '( steam ) coming from the exhaust pipe,, do not run the truck until this is fixed as this can also cause cylinder and rod damage.

Loosing water and its going into the engine

That sounds like a blown head gasket at best or a cracked cylinder head at worst. Try doing a compression test to determine which cylinders are affected, but its going to be a big job either way.

My ranger run's fine on level but on hill's

you got head gasket problems, white smoke is an indication of water turning to steam, probably doing uphill because the engine is under greater load.i think the knocking is pre ignition, carry out an engine compression test to verify your head gaskets integrity
