Have you checked the oxygen sensor? If the engine is running lean, then it would behave the same as you described. Those sensors should be replaced every 80K or so.

1 quick check, EGR valve failure is common with 5.8, You can clean it sometimes to see that it works and if that solves your trouble, do replace it. They seem to go every 50,000 or so , usually caused by running injector cleaners that get caught in exhaust as nonburnable.

that sounds like electrics, can I suggust that you unplug and reconnect connectors under the seat by removing the back cover , please take care doing this as it may be possible to reconnect to the wrong plug so one at a time please.
