Could be a couple diffrent thing's , TPS - throttle position sensor , mass air flow sensor . If you haven't replaced them already ,there are videos on youtube for testing them . Having it hooked up to a scan tool that can show engine sensor data would save some time .

Engine bogs down when attempting to accellerate

Is this a carbureted engine? If so, there's a little pump on the carburetor that squirts more gas into it when you hit the pedal. The diaphragm might be rotten and need replacement.

I'd replace the fuel filter. It's easiest if you use a toggle joint adapter with your socket and ratchet.

When my 1999 Chevy Suburban is cold, I start it up and when the accelerator is depressed, the engine bogs down, and it back fires and stalls. When driving, I have to let off the accelerator and depress it...

Possibly the throttle position sensor. Easiest way to test is connect a scanner and go to real time data mode. With the key on,press the accelerator slowly and watch the throttle position change on the scanner. If it doesn't register a change when you start opening the throttle, replace the sensor.
