Appears it might possibly be caused by fuel not reaching intake manifold, check for clogged fuel filter or possibly faulty fuel pump itself. Both of these items should be bench tested for proper operation, saving owner from being taken by a so called " Professional"
In tank fuel pumps are colled by the lubricant abilities of the fuel in the fuel tank itself, if running on near empty take, fuel pumps can and quite often do fail due to improper lubrication due to low fuel level.

Might be your fuel pressure regulator.. also your car might be vapor locked.Next time it shuts off loosen your gas cap... If you hear it sucking in air... that's your problem...or your catalytic converter is clogging up...check the sensors on the pipes..If there bad it tells your car it needs more gas when it really don't...you will smell gas
My Pontiac Grand Prix is also a 99, it has 216,+ thousand miles on it, it runs great, idles good, I need to replace the oxygen sensor tho as it shuts off on me while driving or sometimes coming to a stop. You might try checking the fuel filter and pump as well.
Have you ever replaced the ignition coil? Sometimes a coil will heat up and break apart inside losing your connection/charge inside it to fire your plugs.
