Are there any lights lit on the instrument cluster ? check engine , a yellow wrench symbol ? Are you familiar with electronic throttle control . Look under the dash ,driver side . Do you see wires a connector on the gas pedal ? Computer controlled throttle control . Electronic Throttle Control could be a problem with this or plugged catalytic converter .

Code 171 means the O2 sensor is telling the computer the fuel mixture for bank one is too lean. Bank one is the side with cylinder number one. The problem could be the sensor, or something else like an injector that is actually causing the fuel mixture to be lean. The sensor would need to be checked.

2003 F150 engine chugging when i accelerate

Check your fuel pump or even your air intake could or might be loose or your putting cheap gas in your vehicle.
If your truck has a V8 I would suggest using 91 octane at Chevron or a Texaco.

From a stop in my 2001 ford F150 it spudders when gas is applied when gas pedal is all the way down there is ZERO acceleration or horsepower

Is the service engine light on? How many miles are on it? This is a common occurrence with plugged catalytic converters, will idle ok but no power on acceleration. It can also be a fuel delivery problem, filter clogged, bad pump... Many possibilities.
