05 ford ranger 3.0......if I put my thermostat on cold...the vent blows hot air..on max ac..its cold air..makes no sense

Cold air like, really cold or just cool. Sounds like your hot/cold blend door motor has perhaps failed with the blend door in the semi hot position. Blend door motor failure is very common on the Ford truck HVAC systems. Is is located behind the glovebox on top of the HVAC housing assembly.

How do I get the Thremostat housing off my 1992 ford Ranger XLT 2.3

To change that thermostat you need to follow the top radiator hose to the motor from the radiator. It will lead to the thermostat housing on the block. The housing will be anchored with (2) bolts to the block (I think). Take the housing off and the thermostat is housed will have to replace it with a manufactured suggested thermo(probably 180* or 200 degree thermo).

Dual cat back exhaust

I have found that the ranger is a lone wolf, there are not a lot of options for exhaust. your best bet would be to get one custom made. Not much more than one you buy from the parts house and buckle it together yourself.
tell the shop owner you wand magna low mufflers and I actually had the cats replaced..that all cost me about 700 bucks and it is Stainless welded.. well worth it and I had the size increased by1/2" it breathes so much easier and you know as well as I the 20 MPG is a pipe dream but that gave me 22..

U should be able to locate it by following the upper radiator hose to the engine, where the hose is clamped to a housing . The thermostat is in the housing, which is usually secured w/ 2 bolts. If this doesn't help, let me know.
