Temp gauge needle keep jumping in the red.

Started a few weeks ago, while driving the needle will jump in the red like the car is running hot, but just as it jumps to the right it jumps back down. I know the car is not running hot because sometimes it immediately jumps to hot when i start the car in the early morning after sitting all night. I also noticed the movement while driving on rough roads and turning corners. Can someone point me in the right direction.

Look for a loose wiring connection--probably at the heat sensor at the top front of the engine near where the upper radiator hose comes off the engine. It should look like a small brass plug with one terminal at the outer end. Any corrosion on the terminal can be cleaned by scraping or small wire brush. A squirt of WD-40 helps make a better connection.

You will most likely have to bleed the air out of the cooling system. The bleeder valve is located just under the intake elbow in the thermostate neck.

Temp gauge and blazer jumps around when driving

Vehicle temperature gauges (temp gauge) read the temperature of the liquid in cooling system. From what I understand, the temp gauge jumping around has since gone away after you placed water into the radiator. It is very possible that water converted into steam was trapped in the cooling system and reached the temp sensor in your engine. The vehicle moving caused this steam to shift around reflecting rapid changes in temperature on the sensor, causing the needle to jump around on your console.
Hope this helps.

Is it normal for the temperature gauge to be at the M in normal on the dash for a 92 ford explorer sport?

Runing at the middle of the temp gauge is normal, If a vehicles temp gauge needle goes into the red zone on the gauge or into the hot zone as far as the needle will go .then you start worrying. Middle position is (NormaL for most (Vehicles) You have nothing to worry about.

Coolant gauge jumping into the red as soon as car starts

If the needle flicks all the way to "Hot" with the IGNITION ON, but without starting the car, you probably have a faulty temperature sender. To confirm it is faulty (without proper test equipment) just disconnect the wire going to it, if the reading falls back to zilch that's what is causing it. The temp sender is often located on/near the thermostat on most cars. Temp Senders are easy enough to change, and are available at all auto parts stores. Check out the availability and price at your local auto store and decide for yourself if you want to have a crack at it.

Thermostat

I would say its the temperature sensor that is your issue, replace it and see what happens but make sure its the right one. Theres one for the gauge and light and one for the computer, the one you need to change will be the one that when you unplug it the gauge will fall to cold. They are normally either in a cylinder head or in the thermostat housing.

Temperature needle jumps.

check the connector at the temp gauge sending unit, it may be corroded, engine movement causes the connection to make and break and this gives the fluctuation in the needle of the gauge..

Temperature/heat wont work/dashboard lights on and off

It sounds to me like you're low on coolant. When you checked the coolant level, did you actually open the radiator cap and make sure the radiator is full? The plastic tank you generally add coolant too is actually an 'overflow' or 'reserve' tank. There is a hose that runs from that tank to the top of the radiator so if the radiator gets low on coolant, more coolant -should- run in from the overflow tank. However in practice this does not always work. I have a Jeep that leaks coolant and experiences this exact same problem. Coolant will not run from the reserve tank into the radiator because the hose is plugged up, and whenever the radiator gets low on coolant the temp gauge will go real high and then drop, and the heater doesn't work well. This is because the cooling system of your car is supposed to be a closed system, full of coolant and no air. When coolant leaks out, the space it used to occupy is now occupied by air, which does not transfer heat well. When 'air' is passing through your cooling system, no heat can be transferred from your engine to the heater and radiator, resulting in a hot engine and no heat at the heater. Then when a pocket of water passes through the system, the temperature gauge quickly falls as the water absorbs the heat from the engine. The hot water that cools the engine is where the heater gets it's heat from as well, so when water passes through the heater core, the heater works, but when it's filled with air, it doesn't.
