What causes the temperature gauge to fluctuations

First of all the guage inside the vehicle is not very accurate. The temp reading will rise and fall about 20 or so degrees when the engine idles as opposed to when it is moving, the reason is airflow through the radiator and the water pump speed.

How to fine fuseds in 1997 Lincoln mark 8 for ac compressed and were ar tha loc

Not a fuse problem .
The A/C clutch circuit is energized by the EATC control assembly but the final control of clutch operation is determined by the Powertrain Control Module (PCM) through the use of variable control relay module.
Your best bet , take it to a qualified repair shop.
The A/C clutch can be shut off (or kept off) for several seconds at engine start-up, during high engine speeds, during acceleration, during low engine idle conditions (approximately 200 rpm below idle specification) and when the engine coolant temperature sensor reading exceeds approximately 120° C (245° F).
b If engine coolant temperature fails to reach 50° C (120°F) after 3-1/2 minutes of operation, the heater blower motor speed will increase and the windshield defroster door will shift from defrost position to floor position.
An On-Board Diagnostic feature has been included in the control assembly to supply the technician with diagnostic trouble codes (DTCs). These DTCs direct the technician to the damaged component. Refer to Inspection and Verification under Diagnosis and Testing.

Idle fluctuates

The computer enriches the fuel mixture and then leans it out to see fluctuation and changes at the oxygen sensor readings, these changes forth and back can often be noticed, also AC pumps cycle from time to time for short bursts just to keep them freed up i think. when the AC clutch kicks in the idle will also fluctuate, again it is normal to some degree. As for air pockets fill the cooling system there should be no air pockets at all nothing but coolant. Air does a poor job of drawing heat from the engine from the inside of a cooling system however it works well outside the cooling system.

Overheating problem, what is the most probable cause?

You need to stop using it immediately before you
cause some damage or more than you may already have
That is just common sense. It should not overheat or
be any different than it was in the past without problem

The car has to be checked over/diagnosed,tested,etc for
various issues to resolve

Borrow or Rent a car until resolved

No way to guess at the problem

You should have some type of codes avail even
if the check light isn't on,you need professional help
to get a start on resolving

The timing belt maybe worn & jumped or the head gasket
bad.

Over heating isn't usually a cheap repair unless the thermostat
sticks partially closed

The RPM moves around the car is 11 years old,so it may just
need a though going over

Timing Belt,O2 Sensors,Exhaust Converter,Spark Plugs
and such

If you depend on a repair shop to do things & don't
have the knowledge to request work done throughout
the year, then you run into a lack of proactive preventative
maintenance situation. Most things are simple looking
back, once resolved

My cooling fan does not come on when car is started.both the ac and cooling fan comes on when ac is started

The cooling fan is required to operate when the engine temperature rises above the maximum operating temperature threshold.
After the car is started, it will usually take some time for this temperature to be reached.
Ensure fan runs when fan control temperature sensor switch demands.

Fluctuating engine temp a/c sends out cold air intermittently

Here's the thing. The ECU will shut down AC if the engine temperature is too hot. If the coolant temperature sensor is malfunctioning (lying to the ECU) telling it that the temperature is hotter than it actually is, the computer will turn the AC OFF.

What should the temp gauge in my 2005 911 C2S read in "normal" operation? The engine seems to start and run beautifully, but I have noticed that the temp gauge inside the car shows the engine warming up to...

they are designed not to fluctuate with engine temp and are kept stable once operating temp is reached. only if the temp exceeds a set mark will the needle rise to indicate overheating,
