SOURCE: Location: Coolant Temp Sensor 2001 Lincoln LS V6

It is on the Driver side of engine in between the COP's (Coil on plugs) simply unplug the wire use a 19 or 3/4 deep well socket and unscrew it and put it new one... The whole process should only take 10-15 minutes.

SOURCE: How to reset Check Engine

You can remove the NEG battery terminal for 10 minutes and it will clear. Or go to Autozone or Oreillys for a free scan, find out why it came on, then have them clear it with their scanner.

I changed the thermostat and coolant sensor on my mercury grand marquis 1998 its still over heating what can be the problem.

The coolant sensor only sets some engine controls and reports to the dash gauges. A thermostat or a electric coolant fan or relay are the likely culprits.

Sensors for cooling

Sensors for cooling what? If you mean temp sensors, should be two. One will be for dash display (usually has only one wire) other is sensor for computer to know engine temp (usually has two wires). Both should be located near the place where the top radiator hose connects to the engine, and near thermostat. If we really knew what your issue is it would be helpful.

Where is the coolant temperture sensor for a 2000 mercury grand marquis LS

I'm showing a fan clutch on the water pump instead of an electric fan on the radiator.
But you could have both.
The computer takes the signal from the temp sensor on the intake manifold to determine engine temp. An electric fan should come on around 230 degrees. There is a relay between the fuse and the fan motor.

I can turn the ac off and turn the heat on in my 1998 Mercury Grand Marquis. How do I control the thermostat? I have tried putting on auto,vent,floor/defrost,defrost, and turned the temp up to 90 and it...

It sounds like thermostat (in coolant system) needs to be replaced. They only control you have for temps are the dials on dash, but if coolant thermostat is sticking you're limited to what it outputs. Replace coolant thermostat and you should be "good to go"
