Issue? 140 is low, could be problem if you need heat. but otherwise? Mileage may suffer if temp is too low. Sounds like the engine thermostat is missing or not functioning properly.

SOURCE: when i come into a complete stop the oil gauge goes down.

as long as it stays in the the nomal area ,its ok . just means @ an idle the pressure is lower . is normal for it to go up and down . if your oil pressure gets to low the check gauge, or engine light will come on .

SOURCE: Both radiator cooling fans won't turn on vehicle overheats

The fans come on only when hot or the AC is on. There are many fuses that have to be good for it to work. The fan relay should have 2 pins hot with the key on, The other 2 should be ground. with the key off one should be hot and the other can then be ground the other pins that are ground one of them is the fan. the other becomes ground when the computer turns the fans on. If you don't have a pin thats hot at the relay all the time then theres a blown fuse or even the power wire from the battery at the battery

SOURCE: temperature gauge goes up and down while driving

Temperature sensor is in intake manifold.
Water is not flowing smoothly through the manifold.
2 immediate things to try........
1. Replace the thermostate (about 6 dollars). If you drive the car to an Autozone for the thermostate purchase, they will show you where it is located and how to replace it.

2. Flush (thoroughly) the cooling system. No shortcuts here, buy the flush and follow directions. Have the heater turned on HI.

After the flush, fill with 50-50 antifreeze-water.

Problem within engine are done. Other issue MAY be the sending unit (as your Autozone guy about that... it looks like a spark plug and takes about 3 minutes to replace.

check for a bad earth in the system . Possibly the earth strap on the motor or dirty battery terminals . IF the temp gauge will not work (bad earth ) and the ac stops working ( cabin air temp reaches setting) or the circuit has an earth problem switching off the ac. Check all wires for broken , not connected properly and check each earth point for clean and tight.

Caravan does't reach operating temperature

No one ever said new means good. Try another thermostat. Make sure it is the recommended temp for the vehicle. I would spend the extra money to buy a dealer thermostat. What controls temp is restriction of flow thru the system until a set temperature is reached and the thermostat opens. Has to be a thermostat.

Air pockets in radiator

Air can be purged. While your engine is cool remove radiator and reservoir caps. Place funnel in radiator. Turn heat to the highest position and start vehicle. Add coolant to radiator as needed while vehicle warms up. You should see bubbles coming out of radiator. Fill reservoir to between cold and hot fill lines. Replace caps when bubbling stops but before coolant temperature reaches normal operating temperature. Never remove the radiator cap until engine has fully cooled down.

I am a little confused here, you say the temperature gage is in the red but the engine is only at 140-160? Is that Fahrenheit?
