The reason for the hot defrost is that is the default if the system goes down in order to keep the windshield clear in any weather. I think I would check the fuses first.

SOURCE: Climate control only blows cool air on defrost

Is yours a coupe, sedan or convertible? If it's a sedan or convertible, there's acalibration technique you can run. With the engine running, turn the temp all the way to the cold side. Turn the mode all the way to the defrost position. Put the fan switch to any position other than off. Then press the rear defroster button until you hear a chime. Let it go. The system will go thru some gyrations and give you a "report" in your odometer readout. A "0" is good.
You may have a bad control head. As you noted, the default mode is defrost, so if the body computer senses a loss of signal from the controls, it will put it into defrost.
Again assuming yours is a convertible or sedan, salvage control heads are fairly commonly available on ebay and in junkyards. The part is used in the sedan and convertible and in the Dodge Stratus from 2001 through 2006, so there are lots of them out there. It's an easy replacement which I would definitely try before tearing the dash apart.
The IOD fuse is the one in the middle of the fuse panel at the left end of the dashboard. Easily recognized by the "ears". You can pop it out with no tools.

Always check body grounds. You may have good power to the engine with a good ground still, but your body grounds control power to all else.

Climate control not working

does the blower motor work on all speeds and does the temp control change from hot to cold? if yes on both questions you may have two different problems. the a/c not coming on cold be the low freon level or a bad pressure switch disabling the a/c system. the defrost only problem is most likely a bad mode door actuator has gone bad.

My heat or my defrost will not blow and when it does blow it wont turn off

If you have automatic climate control, you need to replace your blower controle module
If you have manual climate controls, you need to replace the blower motor resistor assembly.

2000 S10 V6 4.3L having problems with defroster does not blow any air, everything else works blowing hot or cold.

The door that opens for the defrosters is shut for the motor that runs it quit working. They are actuator motors the factory call them. You have this wired to you climate control center for your heater & AC

try putting the selector in a desired position with the key on then turn off the key and disconnect the battery for 10min.
