Could be two different issues.
The low coolant light could be low coolant or a faulty switch.
The other problem could be a long list of things including a fuel pump, a relay, the ignition module, or other things.
You would need to figure out if it is lacking spark or fuel to know which system to test.

Check you coolant resevoir. The low coolant switch is located in the resevoir so if it is low on coolant there, the light will come on. If it is full, it could be that the switch is stuck due to gunk build up in the resevoir. Hope this helps you out

There is a technical service bulletin that talks about engine oil contamination causing your problem. The bulletin number is 04-06-02-007 and is dated August 2004. If they came out with a bulletin on this it must be a common problem.

take the cap off of the radiator (whil engine is cold) start and run the vehicle. keep runnig 30mins after the vehicle is hot keeping notice of the rad fluid level.
keeping the cap off will prevent the pressure build up that woiuld keep the air in the system, keep adding water or antifreeze as the level goes down. this may take an hour or so.
also with the cap off, you will be able to see if your water pump is operating correctly. you will visibly be able to see movement in the rad when the pum is engaged.

like snownbird33 said, first you need to make sure the cooling system is burped. if all the air is'nt removed it will run hot.second make sure your cooling fans are operating, they useually want come on until it reaches around 227 degrees,or the a/c is turned on.third make sure the water pump is'nt leaking if it's a 3.1 liter or 3100 (same engine ) they are bad about the water pump leaking or the blades on the pump are corroded off or propellas are slipping on the shaft.
