I have the same problem on a 2003 Town & Country. The cover for the front 3 cylinders is quite straight forward, but in order to do the rear cylinders I believe you are going to have to remove the cowling below the windshield. You will need a gear puller to remover the windshield wipers first, then remove the cowling. Than should give you more room to work. It's still not going to be easy, but it sure beats paying hundreds of $$$$ in labor charges.
SOURCE: What is the sequence for the bolts on oil pan, for
For the 2.8L there is no sequence. Torque for the bolts are 105 in.lbs.
For the 3.0L torque is 50 in.lbs. in sequence:
For the 3.3L and the 3.8L, no sequence but torque each bolt to 105 in.lbs.

TO answer all your questions, the red oring is for the oil pump pickup tube, one bolt will fix that, RTV sealet is used in the seperation seams at the timing cover and rear seal retainer, 1/6th thick bead, 1/4" wide at seams, has for the trans inspection cover remove it for the repair, 5 bolts will do that part, and rear bracket, then the pan is ready to come off... GOOD LUCK RDJRP

Check were the oil filter screws on to the housing. Make sure the seal don't need replacing on the housing.
