That problem can be a real pain. It happened to us in our Pontiac Aztek. What had happened was that there is a nut cast in the plastic battery tray. The hold down bolt threads down into the nut. Even a small amount of corrosive from the battery can sieze these threads. Trying to unscrew it breaks the plastic away from the nut and it spins.
The task now is to try to get the pieces separated. If you're lucky, soking the area where the nut is with penetrating fluid and leaving it overnight might allow it to loosen up. Since the nut is already turning, you will need to put lots of upward force on the screw to try to keep the nut from turning. This did not work for me but it's worth trying.
The next step is to cut the screw, remove the battery, and remove the tray so you can get at the retaining nut and remove it from the underside of the tray.
If you're lucky you can JB WELD a fresh nut in place and just have to replace the piece that you cut.
If you're not lucky, you replace the tray.
