Question about 2001 Ford F350 Super Duty SuperCab
I had the same problem. Found the sense wire to the PCM and chaffed and would touch ground causing engine to stall even at highway speeds. My wire was chaffed at the turbo pedestal. After splicing in a new section and rerouting the harness a bit there have been no problems.

SOURCE: My 2001 Ford F350 diesel
I'm assuming that this is an intermitent fault; are you make an scanning fault codes? Several items here, O2 sensors, camshaft, MAF/MAP, IAC, fuel pressure, bad injector, etc.
This is the firts step, check the OBD codes for knowed exactly what fault is there.
Tell us news.
