Can you adjust the clutch pedal on a 1981 dodge ram d250

the reason for hard shifting and selection when running is that the clutch shaft ( input shaft) is still turning even though the clutch pressure plate is released
it can be from oil/grease on the fly wheel /pressure plate face causing it to stick when hot
it may be from sticking clutch plate on the splines binding when hot
or it could be a dry spigot bush or failed bearing in the end of the crankshaft that positions the clutch shaft
check the pedal height adjustment and the position it is from the floor when starting to engage
It may be adjustment under the dash

It's on the firewall near the steering wheel,you will see the threaded rod with a wire going through it. Just adjust the nut.and check the pedal height of the clutch.

Under the dash where the clutch pedal exits the cabin at the clutch master cylinder, you will see a two pronged plug. Unplug it and run a a small piece of wire from one side of the plug to the other.
CAUTION: THE VEHICLE WILL NOW START WITHOUT ENGAGING THE CLUTCH PEDAL AND WHILE IN GEAR!

there is a minor adjustment under the dash at the end of the rod before it attaches to the pedal (8mm hex head) may or maynot solve your problem

You need to adjust your clutch rod since you replaced your clutch in order to make it release properly. They should have done this at the shop that did the work. Crawl under the truck and you'll see the clutch rod from the clutch pedal to the tranny's clutch fork arm. On that rod you will see a nut or maybe two, tighten both of them about four complete revolutions and your problem is fixed.
