Question about Chevrolet C1500
You can but your going to put lot's of money and time in to it. The electronic's to the throttle body is tied in with the ecm which also controls the transmission shift points and firmness to the throttle body blade position. If you change it of to the Carb your going to have to replace the intake manifold and and distributor and buy a painless wire harness to tie in with the transmission shift points and you may even have problems having the truck pass emissions if there are any missing for the year and make of vehicle. Unless your going to have it off road use only like a race car. Used to be a time where it was free for all then it changed that you can not even swap a older engine in a car older then it's mauvatured date which mean you can put a 2009 corvette engine in your truck but can not put a 1979 corvette engine in it if your truck is 1980.
