gm had a problem with these engines, the correct repair is to remove the engine, split the block and install timecert's.

this is a major repair.

Does the stop leak work by swelling the rubber seals or by detecting air and stopping up the leak?

It depends what sort of stop leak you're talking about. There's different types.

Something for a leaking windshield rubber works by filling a gap and then becomes hard, similar to how bathroom sealant works.

An oil stop-leak works by penetrating and 'refurbishing' -swelling- dried gaskets and then hardening when it contacts the air on the outside of the engine block.

Some types of coolant sealant work by allowing particles to congregate/collect around a small hole in a radiator, blocking the hole. The particles harden due to the air/heat to form a plug. This type of sealant can also block your heater matrix, and they do not repair rubber hoses (hoses must be replaced if leaking).

A cylinder head sealant works by either depositing particles in a small crack in the head or gasket, or in the case of a modern head sealant, it uses polymers.

If you have a slight oil leak - slight - on an engine or auto box, try a sealant. If it's anything more than a slight weep, then gasket/seal replacement is the best option.

I just bought a new radiator and thermostat and my cadillac is still overheating

check for exhaust in the cooling system. norstar has head bolt issues, allows head to leak combustion into cooloing system, pushing out coolant. Extremely expensive to fix CORRECTLY.

There are two other issues that also happen, and check these first: there is a small coolant hose 1/2 inch or so, that bleeds air from the block, it can plug, check it carefully,

Some water pumps have an impeller that fails, pretty quick overheat, though.

the head bolt issue is more mysterious, almost intermittant, but definately load related, when heat goes up, like going up a hill.

The stop leak most like caused the thermostat to stick closed and caused the over heating which may have blown a head or intake gasket. Have the oil analyzed to see if there is coolant present and if there is you will need to determine which gasket needs replaced. On newer vehicles it's no small job to replace a head or intake gasket os special tools are required.

I believe the head gasket is leaking in my norstar engine, Does thermagasket work in this situation?

Not for very long, but you have nothing to loose.
To test the head gasket, you borrow a pressure tester from a place like Autozone.
It replace the radiator cap, and you pump up to slightly above cap rated psi.
If it does not hold pressure for 5 minutes, you have a leak.
Look for it. It could be water in the oil or out the tail pipe.
If not, then start the engine, get it hot, and water for flutter in the gauge.
If so, then head gasket has compression leak.

Oil in the coolant dept not a lot but oil is in there what can be the problem

Engine is leaking after overheating and stopping on the freeway - there is also water in the oil. seems to be leaking from the bottom of the engine - maybe a blown seal? what does this mean repair wise?

Blown head gasket

Depending on the size of the leak theragasket may work. There are other products that add to the anti-freeze, if it's anti-freeze that is leaking. Some add to the oil. For a temp fix I would and have been able to prolong a head gasket replacement. But it's just a temporary fix. Could last 1 week, 6 months or not at all.
A head gasket replacement is not a easy job, messy if you do it and a little costly if a shop does it. I've been there, Good luck
