My new 2007 Camry V6 did the dance you describe at about 2000 miles. It turned out to be a bad transmission, the so-called "snap ring" problem. They replaced the transmission under warrantee. However the new one did the same thing at 1800 miles on that transmission. I sold the car back to Toyota and bought a Hybrid. You need a Toyota dealer to look at it. Good luck!
Mine's 2008 Camry 3.5 V6 ( Japan made) have never have this problem. There may be 3 reasons. (1) the car ground system is not properly fitted in the car factory, so the the solenoid inside the gearbox is discontinued circuit intermittantly and return to safty mode. (2) you misused the gearbox. I have never you the (+)(-) manual mode. In auto mode, the V6 six-speed box is powerful enough for stunning acceleration and fly to 160 mph. (3) the oil pressure problem. the V6 gearbox does not have the dipstick to check the fuild level. It has special procedure to renew the oil or check the level. Go to buy the Haynes Workshop Manual PN 92009. It will help you solve the problem. I never get into the authorized dealers. Most, there job quality is horrible. They just make your car worse than therefore.

Almost sounds like a throwout bearing problem. Either way, bring the car back and make them fix it. It will be covered under the warranty so dont let them try to convince you otherwise.
