When car is cold it has a 2 to 3 second delay due to a problem with transmission filters.  If you refer to service bulletin TSC 21-007-06 it will tell you what you need to correct problem.

Feels like I'm being held back

Sounds like your brakes are sticking. Possibly the emergency brake is not disengaging entirely? Stop the car and put in park. Apply emergency brake as hard/far as possible. Then release and put in drive and try to go. Most emergency brakes are self adjusting. If the problem still persists, have it taken to your mechanic.

When putting it in reverse, the engine actually moves. It moves again when putting it into drive.

The engine in a transverse configuration must have some fore and aft movement, this is normal. If the movement is excessive check the engine and transaxle mounts.
