Why would a 00 VW GTI not idle?

If the battery was disconnected during oil pan replacement then a idle relearn will be needed. drive car for awhile without using accessories (a/c) then return to idle shut car off 10 min then try again. If motor was lifted to remove oil pan check for broken vacuum hoses a large leak can keep engine from idling.

Busted oil pan now can wont start tryed cranking to start

Did you replace the oil pan? many new cars have an oil level sensor and will not start if they read low oil so as to prevent the motor from seizing from too much heat and friction/wear.

Busted oil pan

Oil pickup tube is likely bent as well, replaced that with the pan?
The click is either because the starter was hit as well or the bent tube is blocking engine rotation. That's on the optimistic side, there could be other damage to the engine or transmission causing this if the starter, battery and power connections check out.

Oil pan busted and then car shut down and wont start

Sounds like the engine seized from lack of oil. It only takes a minute without oil...

Could be anything from a leaking oil pan, to a busted block, to a leaking seal. Have a mechanic look at it.

Something leaking up front on left side.oil is ok,powersteering is ok,brakefluid is ok.

It could be your transmission fluid leaking, Check to see what color it is, if it's a bright red than its that. If you find out that it is your transmission fluid, i would not recommend to drive your car. You may have busted the fluid pan or put a hole in it, which means you may have to go buy a new pan, gasket for the pan, maybe a new filter, and some transmission fluid. Hope this helps!

Does a 2000 Mercury Cougar have any kind of sensor to keep it from locking up the engine when there is no oil? The oil pan busted while driving and engine shut off?

Some cars did have a fuel pump shut off if the oil was low, I don't know about the Cougar. You didn't cook the engine did you? It will run about 2 or 3 mins without oil. Then it is cooked. And how did the oil pan break?? Check it out.
