From your description, I would be looking at the air mass sensor.
Beyond that other things to check are if you have a hot spark. Pull the coil wire fron the center of the distributor, hold close to a metal part of the engine and have a friend crank the engine. If you get a blueish colored spark, the ignition is hot. If it is a weak yellow color, you may not be getting enough voltage to the coil. Note, the mechanic should have never let the truck out of his shop if it was not running right! He has the tools to check the fuel pressure, which can cause your problem. It takes 27-33 psi at an idle to run that motor under throttle conditions, it can jump up to 50 psi. If it can not deliver those pressures you truck will either be very weak on power or won't run at all. Based on your description, I can only assume he had done these checks. Have you replaced your fuel filter? Often people forget all about them and they can get clogged up depending on where you have been buying your fuel. Some stations do not maintain their pumps and you end up pumping trash in your tank. I hope I have given you a few directions to go in. Earlier I mentioner the Air mass sensor first. Belay that. Check the fuel pressure first. Good luck.

I think that your crank angle sensor failed. Is the check engine light on?? if so, scan it and get code. If the code is P0335, than you need new crank angle sensor. Nissan has been having some problems with those even on other Nissan products. (Altima, Pathfinder and so on) Good luck.

What you will need to do is when it doesnt start is to check for spark and fuel, this way you will konw what to look for, this good be a bad fuelpump or a main relay or the coil, next time it doesnt start try spraying starting fluid into throtle to see if it starts if it does then its fuel,

87 Nissan z24 truck 2-wheel drive

If this is the Z24 engine, you may have a mess of issues. That engine has two coils, and one could of easily gone bad. I've seen this problem a lot on this engine, and could be fixed by figuring out which coil went bad. Also check the plugs and wires. Make sure all of the connections are good and maybe change out the coils.
