I had the problem with my 2000 Kia Sportage. The only solution I could find was to replace the fan clutch. The temperature then read normal.

Cheak to see that the coolant fan is operating with the A/C turned on. The fan has to work to help the engine stay cool and help the A/C. When you apply heat on the control it acts to reduce the coolant temp. You will have to get the coolant fan operation checked. This can be :fan motor, fan relay, temp sensor and computer. Good luck

Dont tear it apart just yet.
Is it boiling over?
I have had a similar problem with my dodge. I dont think that your engine is getting as hot as you think, unless it is boiling over. It is probably your gauge. typical dodge. Dont get me wrong I love my dodge. If its not that then maybe the sending unit. One more thing, take it down to your local muffler shop and have the catalitic converter tested. If it is pluged it will cause it to over heat in just a few minutes.
