Which shield? Do you have a pic? If its the "Diaper" that hangs off the rear bumper, you should be ok. I took mine off when I first bought the car, has no effect whatsoever. If its a heat shield that's around the exhaust, it also has no effect, maybe a slight performance decrease due to higher engine bay temps.
Sounds much like a slipped timing belt or one with a tooth or two missing.
Since your engine is not an interference type, damage isn't awaiting you as with many other cars but if the belt has more than 60000 miles on it, it's time to change it.
Timing belt installation on many cars is pretty complicated as far as access is concerned so you might want to get a quote from a dealer.

it sounds like your radiator fan is not working. once your engine reaches a certan temp. the fan should come on to cool it down. also might be the thermostat is not opening. it is not good for the motor at all to over heat and stall. you could ruin your engine. i would change thermostat first and then run it till it starts getting hot to see if the fan kicks on. if it doesn't, it could be the coolant sensor or the fan itself. good luck.
