There's one more thing you can try. On a Mk4 VW, you can reset the service indicator by doing the following:
- With the ignition off, press and hold the tripmeter reset button (on the right side of the dash)
- Turn on your ignition, wait for all the warning lights to come on, then let go of the tripmeter button
- Where your trip distance is normally shown, the display will read "OIL".
- To reset the service interval, turn the clock adjust switch (left side) for about 5 seconds. The trip meter display will change to "---" indicating the code has been reset.
You can verify this by turning the car off and on again. Let me know if that worked out for you.

The thermostat has stuck open. Or you are low on coolant becasue of a leak somewhere. Either way once it sets the code you will need to fix it to make it not set again. The t stat is not easy it's not the one on top of the engine it's on the side behind the alternator.
Also make sure the water pump doesn't have any play. Grab onto the the fan and move it front and back, If there is a clunking feeling or you can see it move alot then you need to replace that also.
Just make sure it's not running when you try and grab the fan. LOL

It isn't an indicator of the car requiring a service, it is telling you that something is wrong with the car and it needs to be seen to. You can either take it to a local auto parts store and they will scan the engine code for free to tell you the issue, or you can take it to a dealer (and they will charge you for the same thing, but will also be able to fix it).
You can 'turn off' this light by unplugging your car battery for at least 30 seconds, but it is unwise as it is trying to tell you that something has gone wrong

engine light comes on and off, these are indication that there is some
error code stored in your vehicles ECM. The engine module computer
needs to be scanned. These will give the code and as per the error code the
further problem can be detected and confirmed. The engine light
indicator blinks or remains steady on dash when engine computer
noticed any problem with any engine electrically operated components.
