Some suggestions:-
Could you have ommitted to connect an oil feed line to the overhead gear,
or incorrectly assembled the overhead gear allowing too much oil flow to the overhead valve gear?

Check for oil in the coolant- if present you may have incorrectly installed the head gasket.

I have a 1992 Mercedes 500 SEL and the car starts and drives but there is water in oil. how much will it cost to fix it?

Dangerous to drive it, the thinned out oil will not keep pressure to properly lubricate the engine. It will be an expensive repair to pull the head off and check for cracks in the head, for straightness of the block deck and head surface for warping, and fitting a new head gasket. Likely the head gasket is the problem. It's a very labor intensive process to get to the relatively inexpensive head gasket, couldn't even guess at cost-depends a lot on location and who you get to do it-but typically, at a shop expect to spend a few hundred dollars.

How to replace head gasket on a 1992 mercedes-benz 190e 2.6

There really are a lot of steps to go through. But its all straight forward no special tools, though you may need an assistant, and you will have to remove the timing chain and mark everything. It would be best to get a workshop manual.

1987 190e Mercedes shooting oil from valve cover in to air cleaner area.

Could be a couple of things.

1st the valve cover gasket is shot because its old.
2nd blocked oil breather is causing high oil pressure which blew the gasket mentioned above.

Replace the gasket 1st and see what happens.

My 1992 190E(1.8) has recently been to 3 garages

You could have 2 problems. The hard start in the AM could be a bad fuel accumulator and or check valve in the fuel pump. The engine cutting out could be a bad idle stabilization valve, dirty throttle body and housing or a bad 02 sensor, could also be just a CO adjustment. Where are you located?

Oil leak

I've never seen a cracked block leak oil. Have problem verified so there is no "or" in your problem. As far as first time jobs, a head gasket on a mercedes is not where to start learning. If its a valve cover gasket, yes try it...otherwise have a quallified pro do the work.
