Cant find the drain plug on the oil pan for my 1999 chrysler concorde lxi

The oil drain plug is located on the side of the oil pan, passenger side. It does not look like a typical drain plug, as it's one of those quick drain type. It is meant to be hand loosened and tightened. DO NOT OVER TIGHTEN or you are in for a world of hurt. Just firmly finger tight

Oil is leaking from a grill on the bottom of the engine, what is this?

I drive a '02 tribute, basically the same as your Escape. My mechanic said the gasget around the oil pan does not seal well on these alluminium oil pans. He ordered, from Mazda a kit that included a new pan, gasget, bolts and pan plug for just over 100.00. So inexpensive the mechanic thinks this is the manufacturer's way of acknowledging that the original pan was poorly designed.
hope this helps
