I would replace the fluid and filter. Sometimes the fluid gets broken down and as it heats up it thins out and cannot create enough pressure. Also the filter could be clogged not allowing enough fluid to flow.

Speedometer will not make transmission act up. Check the fluid level and depending on mileage you may have to replace it.

I have a 97 gmc Sierra v6 automatic and when I start it in the morning it does all the shifts fine and after driving it for about 10 min it struggles to shift into last gear. Don't know what it could...

You don't have a clutch in that automatic, check your transmission fluid first. Make sure you run your truck for 10 min. or so before you check the fluid level. If your fluid is correct then take it to a mechanic, they can check your transmission with their computer and see exactly what is happening when it can't find 4th gear.

The car will get in gear and drive for about 100 yards

I would start by checking the fluid level. THis is most likely a 700 r4 Overdrive transmission, The dipstick is located at the back of the engine bay on the passenger side. The vehicle needs to be running in order to check trans fluid. Pull the stick, wipe it and put it back in the tube, then quickly pull it again, if you don't see any fluid on the stick you are at least 2 quarts low. If the transmission fluid id dark black and smells bad, then your clutches inside are probably toast. That's where I'd start.

Transmission has fluid and will drive. but it will not move that fast and it makes a winding noise.

It has fluid. How much though? The vehicle should be running, warm, and in park. Then check the transmission fluid if it is fine after checking I'd start takin it to the transmission shop, or the junk yard.

Truck starts but won't stay running

You may have a problem with the contacts in the ignition switch (not key part), when you crank the engine a signal is sent to the fuel pump to run, when it starts and you let off the key another set of contacts keeps the pump getting power Through a relay), these are known as crank and run modes.
