I would start with changing the thermostat out.  You should be able to get that and change it yourself for around $20.

Dodge shadow is over heating

Does it overheat within a few minutes or does it take a while?
Few minutes = thermostat is stuck, or low coolant, or broken belt

Takes a while = need the radiator rodded out, cleaned. Low coolant, bad water pump
Does it leak antifreeze?

Fuel

first things first...NEVER use ether in a gasoline engine! you can blow the cam and crank seals, and even the head gasket! Ether is like **** to any engine, and once you start using it, the engine becomes addicted to it, because the computer and sensors will become programmed to the excessive combustion temperatures and pressures. That is probably what has happened, one or more sensors are probably screwed up, namely the mass air flow sensor.

My 1993 dodge shadow overheats and the coolant just dissapears

sounds to me like a blockage in ur pipes. its not uncommon for thermostat/ water pumps to rust out and cause problems. I would remove the return hose from radiator at home, run a hose into ratiator and flush. start motor for a minute or two and make sure you are getting flow through.
