have you drained it latly or could you have gotten air in the system ? The sensor might be in an area which is getting air around it instead of water and it will not operate proper .. jerry

I have a 2003 toyota 4 runner sport, runs great in town and at 55 miles per hour, but on hwy at 70 + miles her hour it over heats why?

Water pump isn't moving enough water at the extra highway speeds. I've seen toyota water pump impellers wear down and sometimes it slips on the shaft. Look at replacing the water pump.

Why does temperature gauge only reach a little past half?

Larry, If the cooling system was not bled properly, the temperature could fluctuate up to 3/4 then normally back down to 1/8 on temp gage.
If your gage is just staying a little over half when running, that is actually normal and acceptable.

-Is your car running fine and just over heat...?
Here there are few things that need to check:
Q:-Is it full of coolant (Water)?
A: -No Add more water untill full and ran your car again.
Q: Problem solve...?
A: -Yes. (You're done)
-No. Go to the next step

-Check the thermostat . Is it function at a certain temperature?
(This Mean take it out from the car and boil it, use a temperature gage
watch when you boil. It start to open at what degree) If not open at all
or open at too hight. Replace it.)
Good one should start open at 180 to 190* (Must be full open)
-If the engine is normal, but the temperature gage keep going up. It could be effect the temperature sensor itselt.

Temperature gage fluctuates when driving my 1996 mazda protege

Well sounds like first start your car record where the temp needle reads, then let the engine warm up (with out driving) then rev the engine to about 3500-4000rpm a couple times does your needle move at all record then hold your rpm at 3500 for about 5-10 sec does this get the gauge to drop? sounds like you may "if not over heating at all and coolant level and circulation is good" have a circuit problem, you can test this by going to auto zone and ask for a scan to be done on your car when the plug into your OBD 2 ask them to go into DATA STREAM and then check to see what temp your ECM thinks the engine coolant is at does it match your gauge at idle and at 3500rpm if not its a faulty circuit

Temperature gauge is fluctuating while driving.

I'm thinking the coolnat level is low, and this might be caused by a bad head gasket - At least $800 to fix - sorry.
