After checking coolant level, I would check electric radiator cooling fan operation. Sounds to me like they are not working. Hope this helps

Gauge instrument temperature

It sounds like the water sensor that sends signal to the computer is bad. Buy one at parts store for $10 or $15 dollars and unplug 1 wire ,screw it out with a 3/4" wrench.

The guage for our 2001 Ford F150 begins to rise to hot when we turn on the a/c. It has rising for the past 2 days

Start with the basics such as verify correct coolant level and water pump operation. Check air flow across condenser and radiator. It is easy to fold-over the cooling fins with high pressure at car wash. Observe operation of fan to make sure viscous function properly spins fan blade at high temp. Also verify a good radiator cap. All the basics covered and no problem found you should then look into possibility of restricted radiator core, especially if temps are rising slowly, such as under load or long, hard pull up a hill. Will be more noticeable on hot days. Least likely from the description is thermostat, though don't forget it if necessary.

2004 f-150 5.4L temp. rising at speeds over 65mph

Not a mystery....just sounds like your temp sensor on the block may be bad.

Easy way to be sure, go to an auto parts store when you do get the check engine light and have it read and see what the code is. If they can't tell you what the code number means, come back here and post.

Check the cooling fan switch and the temperature control switch, they should be turning your fan on when the engine temp begins to rise (as when u stop and gauge starts to climb).

Use on of those quick freon kits that come with the fill tube and gauge. It sounds like you have a slow leak and on a hot day there is enough pressure in the system to trip the switch. If thats not the problem check the wiring coming from the switch. The switch is probably near the filter/dryer. Thats the metal canister that sweats liquid on a hot day.
