White smoke is a sign of water burning, or steam. check the liners for a crack.

Sounds like the head gasket blew and exhaust is entering the cooling system and exiting threw the heater core. Does the radiator smell the same? If the coolant is low and the smell is in there as well you have lost your head gasket.

since its a 1997 your jeep has EFI, electronic fuel injection. The most probable reason for your troubles would be the injectors or a problem with the computer controling them, not allowing enough gas to be pushed into the cylinder causing stalling or lack of power, also too much gas iin the cylinder can lead to back firing and stalling. This would also explain the reason it takes so long to start back up some times, all the excess gas in the cylinder is flooding the motor and u have to wait till the gas disipates till the engine will turn over.

best idea is to get it to an accredited service shop that has a scanner to read the fault codes
indicates a crank/cam position sensor or wiring problem
a mechanic that cannot do basic fault finding especially when there are records stored in the ECM to help him is not a real mechanic

Well, you have to let diesels warm up before you drive them so the engine gets warm and it may not sound right at first because if its not warm the compression gets off and doesnt fire right. If you try to give it too much gas before its warm, extra diesel will get in the cylinders and misfire. Then when it does fire, there is a lot of extra fuel in it so that causes the smoke and smell. You should always let it warm up for a bit before driving when you havent driven it for a while.
