Don't know where thermostat is located in engine
The thermostat is located in the intake follow the top radiator hose to the motor disconect hose remove thermostat housing and there it is.

You open the hood, put your right hand down and there should be a big black hose coming out of the radiator right close to it. Follow the hose to where it connects to the engine. This shold be the thermostat housing. It's usually aluminum and has two or three bolts holding it in

Ignition timing is set by the computer as long as the distributor pickup point is within reason.
It could be running too lean. One of the TBI injectors may be sticking or not working (wiring or computer problem), or fuel pressure could be low.

Depends on what thermostat you put in. Stock is a 190*. Which will usally run about 200-210. That's where most all small blocks are happy.
