When I hit the brakes, coming to a slow, easy stop, there's a knocking noise that seems to be comimg from the rear brake drum.

No just make sure your emergency cable is off and take a large hammer an hit it around the edge or corner lightly and spin at the same time also try pulling with your other hand as you spin this is a technique all mechanics use its very unlikely that you will have to loosen up the shoes with a brake spoon.REMEMBER THE OUTER ROUNDED EDGE ONLY WHERE ITS THE THICKIST.

It is due to the sway bar links, The problem is that sometime it does not tight till end and it is loose at the sway bar end.
Its very difficult to repair, open most of the time it needs to cut out due to rust and bad design of the end.
You need to replace it with new and make sure it is tight and does not have any play.

There are 2 bolts on the "inside" on the caliper towards the bottom they use an allen wrench socket.

back off the adjusted (behind the backing plate) few taps with a hammer to loosen thing up drums should come off.
