Have you replaced the throttle position sensor or the AIT sensor? Air intake temp sensor adjusts fuel mix as the engine reaches running temp. Easy to replace, not expensive.

Instructions for replacing fuel pump in a 2001 ford Escort ZX2

Remove the rear seat, remove the 4 screws holding the metal cover, and you'll see the top of the fuel tank. The pump module is held in place by a locking ring that can be removed by use of a brass punch and hammer. If the ring is rusted, it'll get damaged during removal and will need replaced. You can get a new ring from Ford. Once the ring is removed, you can pull the pump module out. Remove the small screws from the top of the module and you can pull the top off of the basket to gain access to the fuel pump. Replace the pump and get new fuel pump strainers.

Have you changed your oil? Rotella 15W-40. These engines really don't like old oil. It becomes too thick for the injection pump to work correctly. Another possibility is a bad cam sensor on the front of the motor. Most engines call this the crank sensor but on this engine you have to look it up as a cam sensor.

Water pump/timing belt

Simple thought but try the thermostat first. It's not circulating because the thermostat is not open. When it reaches operating temperature, the CTS sends the signal to the computer and fuel is adjusted. The thermostat, gasket and RTV sealant will run you about $12 total.
