Have a pressure test done on the fuel manifold to check for fuel regulator/ pump problems. Have the injectors check for leakage. run fault codes to check air sensors faults

Have you done a tune lately on the car?
I would also suspect a fuel pump problem is you've done a tune up recently.

93 isuzu rodeo with 3.2 engine cuts off when you give it gas

Vehicles need fuel, spark, and air to run. You started with the basics like spark and fuel, great. Slow down on the parts installations and take yourself back to basics.

1. Check your fuel lines for leaks.
2. Inspect the vacuum lines for cracks ( you stated it got cold outside. This may contribute to old hard lines cracking).
3. Remove the air filter box and filter and make sure airflow is free of any blockage. Test car without air filter installed and see if it stays running while giving gas. If it does replace air filter
4. Check the throttle body Mass Air Flow Sensor. This detects how much air is coming into the system. It reports to the main computer. If the MAF tells the computer there is significantly not enough air the the system will shut down. My guess would be a big vacuum leak or you have a bad MAF.

The check engines light came on and i can't find anything wrong & the motor rpm is high them it high

O2 sensor may be dirty from not running premium gas. Check your exhaust for smoke when revving the engine. This will indicate a fuel air mixture that is too rich, usually caused by a sooty O2 sensor.

Won't re-start after stopping for gas/rest during road trip.

This problem sounds like you have a fuel pump over heating and shuts of the relay. When it cools off the relay kicks in and you can restart your vehicle. Replace your fuel pump and the problem will go away.
