Need to scan ECU and read any stored codes. . 'Throttle relearn' may be required too which is also done by a scanner .

Throttle control motors also fail but 'relearn' will usually indicate if motor is bad. It's an easy visual diagnosis to check if throttle plate is moving during testing.

I have a 2000 GMC Jimmy that the heater does not put out much hot air and sometimes cold air with the tempture control turned to the max.

Does the engine reach normal operating temp, over 200 degrees F? Are the heater hoses hot? It could be a temp control actuator, under the dash?
I'd have to do some testing to find the problem. Have you done any testing?
You ever check the thermostat?

Water tempture goes up and down in secounds then car tells me to stop oil tempture not working

This sounds as though you have a low coolant level. Do seek professional advice, as you are likely to seize the engine.

Tempture gauge goes up and down and blows cold air all the time

Have you bled the system - the issue might be due to an air lock.

Had similar problem. Air temp.was 95 degress or more and I was running the ac setting still. Temp gauge went up to 240 or 250. I increased te rpms while sitting still and temp came down. Once I starting moving temp came down to normal operating limit.

A ight came on in my dash teling me to check coolent tempture and the tempture gauge was high

So you have an overheating problem. Check the coolant level in the radiator, check for coolant leaks with engine running (fill radiator if necessary), check temperature of upper rad. hose as engine gets hot (this checks for thermostat operation). Could also be a clogged radiator, bad fan clutch, or blown head gasket.

I ask a question 2 days about why my car was running hot. You said replace the engine tempture sensor. Can't locate it. Someone said it was the oil sensor and tempture sensor are the same, but the one...

The engine temp sensor is near the thermostat toward the front of the engine. Is the car actually running hot? I would measure the actual water temp and be sure before I started just replacing sensors.

When car is hot the engine starts to rattle

you can try a tune up first or you can have your compression check you can have a crack will keep an air bubbles in the water an mess with the temperature sensor. but you must be adding water to the radiator. do you have any water in your oil? if not a major tune up will fix you up.

2000 ford windstar heater blowing cool air

Hi, You may have an air lock in the system. Have you ever had the system flushed out? This might be the fix. Also the thermostat might need to be replaced. You didn't say if you hear the clicking noise. If you do hear the clicking noise when you adjust the tempture control then its back to the replacement of the blender motor box with broken gears.
Hope this helps Warren
