Heating and ac work perfectly, but only in one area. All the air is blowing up through the defrost vents. changing the control knob for a different area doesn't work

seems like you lost vacuum line that supplies the selector switch, check under the hood look fro the small green hose that leads into the cab, might be broken.

AC/Heat/Defrost inoperable

Chanses are its either the blend door motor quit working or the controls ( temp., selector, blower) in dash are bad, my 95 did the same thing i chg. the blend door motor thinking it was that, but it turned out to be the controls in the dash, 5 minutes work and 140.00 later it was fixed.

Air only from defrost.

The hoses are attached to the back of the selector and then run up behind dash.

Vent selector inop

U have either lost the vacuum to the mode selector switch (in the dash control) or the vacuum mode selector switch is leaking in the ac/heater control in the dash, u can usually hear a hiss if it is leaking. the vacuum source is the engine, a small hose runs through the firewall on the passenger side to the switch from the eng vacuum source.

AC/heat/defrost functions don't work

there is a blend door and a selector door in the HVAC system. These are run by vacuum or servo motors. Sounds like this little motor is your problem. Hope this helps you.
