Question about GMC Sierra
Generally speaking I would guess lack of fuel. The carb has three circuits - - idle, cruse, and accelerate. It can be ok at idle but not getting enough fuel when you try to speed up.
Could also be a vac leak or other problem including the fuel filter.

Check and clean Idle air control valve. Make sure its responding to signal as well. Also make sure ther are no vacuum hoses disconnected. This may not be a "cure" but it's a good place to start.

its more than likely its your timing, check to see if your crank shaft TDC marks align correctly, I also had this issue and it was the woodruff key in the crankshaft rod broke which throughs your timing off. my key hole was in really bad shape so i J B welded it which worked for a little while

Check TPS for smooth and linear electrical response over the entire range of motion. If the response is jumpy or erratic at all, replace TPS.
