Question about Chevrolet Express
Any chance the check engine light is on ?
My first thoughts are fuel pump, ignition module or coil. It may be tough to find if you can't duplicate the problem in a repair shop. Someone may have to take tools and equipment on the drive and troubleshoot it when it happens.
When it happens, will it sit and idle or does it shut down ?

A bad earth connection point on my New Zealand model Chrysler Voyager LE (same car as yours but right hand drive) caused similar problems, including the towing thing. My dealer told me that they would be busy for 3 weeks - dealer talk for "we would prefer to sell you a new one".
A bunch of black wires connect to a chassis ground bolt on my model on the right hand side wall, under dashboard height. I was "lucky" to have the fault present when investigating it, and testing I did afterwards proved this to be a definite cause. You have to remove some covers and pull the floor carpet away This may be on the left on your model. A plug in connector is used, to bring multiple wires together at this point. All I had to do was undo the nut and clean the metal of the bolt and earth lug - use a file or sandpaper, and maybe spray on some WD40 or CRC to impove conductivity. I added an extra washer to help the metal to metal bond also.This seems to have fixed the problem. It has been OK now for about 1000 miles. Good luck !

1-timing on truck is ajusted by ecm,when u moved it u cause cam sensor code because it detected timing was off! 2-o2 sensors has the role of detecting air to fuel ratio coming out of exhaust,sends signal to ecm wich collects data from other sensors from that sets timing for best performance,if ecm detects something wrong in system data it will give engine code,that code will point at problem area,in your case o2 sensors probably detected lean fuel ratio that points to fuel system,blocked fuel filter or fuel pump faillure,elect,circuit damage,hope it helped!

These sometimes have problems with the magnet on the distributor shaft loosing magnetism. This causes the pickup coil not to be able to produce a strong enough signal for the ignition module and the engine dies because of no spark.

FUEL PRESSURE MUST BE 62 LBS. OR GREATER OR IT WILL NOT GROUND INJECTORS, IF ITS OK THEN CHECK YOUR GRAY 12V SUPPLY TO PUMP AT CRANK-UP, YOU MAY HAVE A POOR IGNITION SWITCH.
