The oil in the system circulates with refrigerant flow. Some oil accumulates in the condenser, in the accumulator receiver filter dryer, some in the evaporator, some in the hoses and tubes, and some is left in the compressor.
Of the total capacity, I would guess a half cup would remain in the compressor or about 50% of the system oil capacity.
It is recommended to drain, and replace the same amount oil and when new compressor is used, it comes pre charged with oil normally .
This refrigerant poly oil is arthroscopic and should not be left exposed to the atmosphere, it is why flushing and cleaning old oil is performed thru the system.

There should have been a sticker on or around the accumulator with the specs.
Oil capacity is the amount drained from the old compressor, plus 3 oz. for the accumulator. Freon charge would be around 36oz or 3 cans.
You would put in 2 cans and then add until the pressure readings are within spec.

If you mean "how much does it hold" there is a sticker in the engine compartment or on the compressor that gives the capacity.
On that kind of car, I would say total capacity would be around 4 cans or 3 lbs. That is if the system is empty and has a vac when it is filled.

Total PAG oil capacity is 8 ounces if completely empty
Total Refrigerant charge is 1.6 pounds
oil replacement with just changing certain items as follows.
Compressor Replacement add 2oz
Condenser replacement add 1oz
Evaporator Replacement add 3oz

Look for a light blue label in the engine compartment, the refrigerant capacity and oil capacity are on that label. But, being a '97, that label might be long gone. That information can also be found in a service manual. Manuals can be purchased at parts stores and you might even find one at a library. You could also call a dealer's service department and ask them.

Capacity is aprrox 1.75 lbs with proper gauge (28 ozs). Leak points are many, low side port ,high side port, high and low cut off switches,evap inlet,compressor manifold,condensor inlet and outlet...to name a few.
